While fun and entertaining, as a bartender and bar manager, I hate flair. Guests wait longer for drinks and usually the bartenders are more jugglers than actual bartenders (don't know many recipes, etc). We hired one of America's nationally ranked top bartenders and while it was initially a draw, people eventually began to complain about waiting. It is pretty cool though, when you already have a drink and can watch.
